Caroola Farm is a family-owned, permaculture-based, beyond organic, local-market farm and informational outreach organisation in the NSW Southern Tablelands. Established in 2012 by Penny Kothe and Paul McKinnon, the intention is for the farm to be a permaculture demonstration, and to be a working, profitable farm to service the local community.
In addition to the chickens and ducks that we source from Caroola Farm, they also produce beef, lamb and pork, as well as herbs and vegetables.
Caroola Farm is one of only two Humane Choice certified poultry producers in NSW, and that ensures that the chicken and duck you are eating has been raised in a truly free range environment, and has been processed in an ethical manner.
In addition to the conventional Light Sussex chickens that are regularly used in meat chicken production, Caroola Farm are embarking on a project to grow and supply the Sommerlad Australian heritage-style chicken - a meat chicken breed that has been developed to thrive in Australia's outdoor environment and produce gourmet quality meat. The chickanes are slower growing than their conventional counterparts (they take twice as long to grow), which means they have time to accumulate more nutrients and flavour, and are much hardier in the free ranging environment.
